Method

Make a dough with flour, water and salt, knead until smooth and allow to rest for 30 minutes covered. Mix the beef mince with chopped onion, coriander, mint, black pepper and beef stock to create a moist filling. Divide the dough into 8 equal portions and roll each very thin on a floured surface. Place a spoonful of filling in the centre of each dough circle, then fold the edges up and pinch together at the top to create the characteristic khinkali shape. Bring a large pot of salted water to a rolling boil and carefully add the khinkali, stirring gently to prevent sticking. Cook for 8-10 minutes until they float and the dough is tender, then drain and serve immediately with melted butter poured over.
