Method

Heat the olive oil in a large heavy-bottomed frying pan over medium heat and add the sliced garlic, cooking gently for 2-3 minutes until fragrant and just beginning to colour, being careful not to burn it. Increase the heat to medium-high and add the prawns, seasoning with salt, pepper and chilli flakes, cooking for 2 minutes on the first side. Turn the prawns and cook for another minute, then add the white wine and lemon juice, allowing the liquid to bubble gently for 2-3 minutes until the prawns are cooked through and the sauce reduces slightly. Taste and adjust seasoning as necessary, then scatter with fresh parsley and serve immediately with crusty bread or rice to soak up the garlicky sauce.
