Cut the pork belly into bite-sized cubes and blanch in boiling water for 5 minutes, then drain and set aside. Heat oil in a large pan and fry the minced garlic until fragrant, then add the diced onions and stir-fry until softened. Add the blanched pork and cook for 3-4 minutes until the edges begin to brown. Pour in the soy sauce, vinegar, water, bay leaves, and black peppercorns, then bring to a simmer and cook uncovered for 20-25 minutes until the pork is tender. Cut the tofu into cubes, carefully add to the pan, and simmer gently for another 8-10 minutes without stirring too much to prevent the tofu breaking apart. Taste and adjust seasoning with salt if needed. Serve hot with steamed white rice.
