Soak the bread in water until soft, then squeeze out excess moisture. Place the cod roe in a food processor with the squeezed bread and begin blending. Gradually add the feta cheese whilst continuing to process, then slowly drizzle in the olive oil and lemon juice alternately until the mixture becomes pale, fluffy and mousse-like. Add white pepper and adjust seasoning with salt to taste. The texture should be light and whipped rather than dense. Serve chilled with warm pita bread or crusty bread for dipping.
