Mix cornmeal, grated coconut, flour, brown sugar, salt, cinnamon and nutmeg in a large bowl. Heat the coconut milk and butter together until the butter melts, then stir in the vanilla extract. Pour the warm liquid into the dry ingredients and mix thoroughly to form a thick, smooth batter. Soften the banana leaves briefly over a flame, then divide the mixture into 6 portions and wrap each portion in banana leaf, folding securely. Place the parcels in a large pot of boiling salted water and boil for approximately 45 minutes to 1 hour, until firm. Remove carefully with a slotted spoon and allow to cool slightly before unwrapping and serving.
