Preheat the oven to 190°C and grease a baking tray. Combine the plain flour, wholemeal flour, bicarbonate of soda, salt and cinnamon in a large bowl. Rub in the cold butter until the mixture resembles breadcrumbs, then stir in the caster sugar. Peel, core and roughly chop the apples, then fold them gently into the dry ingredients. Beat the egg into the buttermilk and add to the mixture, stirring until just combined into a soft dough. Shape the dough into a round loaf on the baking tray, cut a cross on top with a sharp knife, and bake for 50-55 minutes until golden and a skewer comes out clean.
