Method

Bring the water to a boil in a large pot and add salt to taste. In a separate bowl, mix the maize meal with 200ml of cold water to form a smooth paste, ensuring no lumps form. Slowly pour the maize meal mixture into the boiling water whilst stirring constantly to prevent lumps from forming. Reduce the heat to low and continue stirring frequently for 15-20 minutes until the pap thickens and becomes creamy. The pap is ready when it pulls away from the sides of the pot and has a smooth, porridge-like consistency. Stir in the butter or oil and serve hot in bowls. Pap can be enjoyed plain or accompanied by savoury toppings such as onion and tomato relish, beans, or a fried egg.
