Heat the oil in a large skillet over medium-high heat and sauté the onions, garlic, ginger and thyme until fragrant, about 2 minutes. Add the chopped Scotch bonnet peppers and sliced bell peppers, cooking for 3-4 minutes until slightly softened. Add the shrimp with salt and black pepper, stirring constantly for 2-3 minutes until they begin to turn pink. Pour in the lime juice and continue cooking for another 2-3 minutes until the shrimp are fully cooked through and the peppers are tender. Taste and adjust seasoning if needed, then garnish generously with fresh spring onions and serve immediately with rice or fried dumplings.
