Shred or chop the cooked chicken breast into bite-sized pieces and place in a bowl. Halve the avocado, remove the stone, and slice the flesh, then gently toss with the chicken, lime juice, olive oil, salt and pepper. Finely dice the cherry tomatoes and red onion, then fold into the chicken mixture along with fresh coriander. Gently separate and dry the butter lettuce leaves, then spoon the chicken mixture evenly into each leaf. Serve immediately with extra lime wedges on the side.
