Method

Pound the garlic and chillies together in a mortar until bruised. Add the long beans and tomatoes, gently bruising to release flavours without completely breaking them apart. Add the shredded green papaya and lightly pound to combine. Pour in the lime juice, fish sauce and palm sugar, then toss everything together thoroughly. Transfer to a serving plate, top with crushed roasted peanuts and scattered dried shrimp, then garnish with fresh coriander leaves.
