Mix the flour, baking powder and salt together in a large bowl. Gradually add water whilst mixing with your fingertips until you have a soft, slightly sticky dough. Knead the dough for 2-3 minutes until smooth, then divide into 4 equal portions and shape each into a ball. On a floured surface, flatten each ball into a disc approximately 10cm in diameter, then gently stretch it slightly thinner. Heat the oil in a deep frying pan to 180°C, then carefully slide each bake into the hot oil and fry for 2-3 minutes per side until golden brown and puffed up. Remove with a slotted spoon and drain on kitchen paper. Serve warm, traditionally split and filled with cheese, salt fish, or other savoury fillings.
