Mix flour and salt in a large bowl, then add 2 tablespoons of oil and rub through with your fingertips until the mixture resembles breadcrumbs. Gradually add warm water whilst mixing until a soft dough forms, then knead for 8-10 minutes until smooth and elastic. Cover with a damp cloth and rest for 30 minutes. Divide dough into 8 equal portions and roll each into a smooth ball. Heat oil in a deep frying pan or wok to 180°C. Roll out each ball into a thin disc approximately 12cm diameter. Carefully slide each disc into the hot oil and it will puff up immediately; fry for about 30 seconds on each side until golden and crispy. Drain on kitchen paper and serve hot with curry, vegetables or pickles.
