Preheat oven to 200C. Mix flour, baking powder and salt together, then rub in the cold butter until the mixture resembles breadcrumbs. Stir in the milk gently until just combined into a sticky dough. Turn onto a floured surface and pat out to 2cm thickness, then cut into 8 rounds using a cutter. Place on a baking tray and bake for 12-15 minutes until golden. For the gravy, brown the sausage meat in a large pan over medium-high heat, breaking it apart as it cooks for about 5-7 minutes. Sprinkle flour over the meat and stir to coat, cooking for 1 minute. Gradually whisk in the milk, stirring constantly to avoid lumps, then simmer for 3-4 minutes until thickened. Season with salt and pepper. Split the warm biscuits and serve generously topped with sausage gravy.
