Heat the vegetable oil in a large cast iron skillet or over charcoal until very hot. Working in batches to avoid overcrowding, sear the beef cubes for 3-4 minutes per side until deeply browned and charred on the outside, keeping them rare to medium-rare inside. Transfer to a warm plate and rest for 5 minutes before serving with ugali, grilled tomatoes, and onion salad.
