Method

Beat the eggs with sugar and eau de vie until pale and creamy, then fold in the fresh brocciu cheese gently to maintain its delicate texture. Stir in the lemon zest, flour, and a pinch of salt until just combined, being careful not to overwork the mixture. Butter a round baking dish generously and pour the brocciu mixture into it, smoothing the top level. Bake at 180 degrees Celsius for 35 to 40 minutes until the top is golden brown and the centre is set but still slightly creamy. Allow to cool slightly before serving warm, as the cheese will continue to set as it cools.
