Toast the sesame seeds in a dry frying pan over medium heat for 3-4 minutes until golden and fragrant, stirring frequently, then set aside. Toast the almonds and peanuts separately in the same pan until light golden, roughly chop them, and combine with the sesame seeds. In a heavy-bottomed pan, melt the butter over low heat and add the flour, stirring constantly for 8-10 minutes until it becomes golden and nutty in aroma, being careful not to burn it. Remove from heat and stir in the honey, cinnamon, ginger, and salt until well combined. Add the toasted nuts and seeds to the mixture and fold through thoroughly until evenly distributed. Press the mixture firmly into a shallow serving dish or on a large plate and allow to cool slightly. Once cooled, dust generously with icing sugar and shape into a dome or pyramid form, then serve at room temperature.
