Cook the egg noodles according to packet instructions, drain and set aside. Heat the vegetable oil in a large wok or frying pan over high heat, then add the diced chicken and stir-fry until cooked through, about 5-7 minutes. Add the onion, garlic, ginger, carrots and celery, and stir-fry for 3-4 minutes until softened. Return the noodles to the pan along with the beansprouts and spring onions, then add the soy sauce, oyster sauce, sesame oil and chicken stock, tossing everything together for 2-3 minutes until well combined and heated through. Serve immediately whilst hot.
