Peel and boil potatoes until tender, then mash them with salt and pepper whilst warm. Mix flour, eggs, water and a pinch of salt to form a soft dough, then knead until smooth and elastic. Finely dice onions and fry them in half the oil until golden and caramelised. Roll out the dough thinly on a floured surface, spread the mashed potato and caramelised onions evenly across it, then roll up tightly from one long edge. Coil the roll into a spiral and place in an oiled round baking dish. Brush the top with remaining oil and bake at 200°C for 45-50 minutes until golden brown and crispy. Serve hot with soured cream on the side for drizzling.
