Method

Rinse the millet thoroughly under cold water to remove any dust and debris. In a heavy-bottomed pot, bring the water to a boil with salt added. Add the millet and simmer for 15 minutes, stirring occasionally to prevent sticking. Pour in the milk and reduce heat to low, stirring frequently and allowing the mixture to cook gently for 20-25 minutes until the millet grains are completely tender and the porridge reaches a creamy consistency. Stir in the butter until melted and combined. Serve hot drizzled with honey, which adds traditional sweetness whilst maintaining the porridge's wholesome character.
