Peel the green bananas and cut into thick rounds, then soak in salted water for 10 minutes to prevent discolouration. Heat oil in a large pot and fry finely chopped onions, minced garlic, and grated ginger until softened. Add curry powder and turmeric, stirring constantly for 2 minutes to release the spices. Drain the banana pieces and add to the pot, stirring to coat in the curry mixture. Pour in the coconut milk and fish stock, add salt, pepper, and whole chilli, then bring to a gentle simmer. Cover and cook for 25-30 minutes until the bananas are tender but hold their shape, stirring occasionally. Adjust seasoning and serve hot as a main dish.
