Halve the avocados lengthways, remove the stone, and scoop the flesh into a bowl. Squeeze the lime juice over immediately and gently mash with a fork until you reach your preferred consistency—chunky or smooth. Finely dice the red onion, deseed and mince the chilli, then chop the coriander and dice the tomato. Fold these ingredients into the avocado mixture, season with sea salt and black pepper, and stir gently to combine. Taste and adjust seasoning as needed. Serve immediately with tortilla chips or as a topping for Mexican dishes.
