Method

Make a soft dough by combining flour, eggs, salt, water and oil, then knead for 10 minutes until smooth and elastic. Cover and rest for 30 minutes. On an oiled cloth, stretch the dough very thin until nearly transparent, working carefully from the centre outwards. Peel, core and slice the apples, then toss with sugar, cinnamon and raisins. Spread the apple filling evenly over the dough, leaving a border, then dot with butter. Using the cloth to help, tightly roll the dough from the long side into a log shape. Place seam-side down on a baking tray lined with baking paper, curling into a spiral if needed. Bake at 190°C for 45-50 minutes until golden brown. Cool slightly, dust with icing sugar and serve warm.
