Heat oil in a large heavy-bottomed pot and fry the chopped onions until golden brown, then add minced garlic and ginger, stirring constantly for 2 minutes. Add the pork pieces and brown them thoroughly, breaking up any clumps. Sprinkle turmeric and chilli powder over the meat, stirring well to coat, then add fish sauce and continue cooking for 3 minutes to develop the spice base. Pour in the coconut milk and water, add the cubed potatoes, season with salt, and bring to a boil. Reduce heat and simmer gently for 45-50 minutes, stirring occasionally, until the pork is tender and the sauce has thickened and darkened.
