Method

Mix the flour, salt and yeast together in a large bowl. Add the warm water gradually whilst mixing until a soft dough forms, then knead for 10 minutes until smooth and elastic. Cover and leave to rise in a warm place for 1-2 hours until doubled in size. Divide the dough into 8 equal portions and shape into balls, then roll out each into a thin oval about 5mm thick. Heat a heavy-bottomed frying pan or griddle over medium-high heat until very hot and cook each bread for 2-3 minutes on each side until golden and puffed. Brush each warm bread generously with ghee and a drizzle of honey whilst still hot. Serve immediately whilst warm, stacked and wrapped in a clean cloth to retain warmth.
