Cut the chicken breasts into 3cm cubes and place in a bowl. Mince the garlic and whisk together with olive oil, lemon juice, paprika, cumin, oregano, salt and pepper to create the marinade. Pour the marinade over the chicken, toss well to coat, cover and refrigerate for at least 2 hours, preferably overnight. Cut the onions and peppers into bite-sized chunks roughly the same size as the chicken. Thread the chicken and vegetables alternately onto skewers, beginning and ending with a vegetable piece. Heat a griddle or barbecue to high heat and cook the skewers for 12-15 minutes, turning frequently, until the chicken is cooked through and lightly charred. Serve immediately with rice pilaf, flatbread and a fresh salad.
