Melt butter in a large pot and soften the diced onion without browning for about 3 minutes. Add the diced potato and fish stock, bringing to a simmer and cooking until the potato is nearly tender, approximately 10 minutes. Cut the salmon into bite-sized pieces and add to the pot, simmering gently for 4-5 minutes until just cooked through. Stir in the single cream and fresh dill, heating through without boiling. Season with lemon juice, sea salt and white pepper to taste, then serve immediately.
