Method

Soak chana dal for 30 minutes, then cook until soft and mash well. Crush cardamom pods and extract seeds, then pound into powder. Heat 20ml ghee in a pan and roast the mashed dal briefly, then add jaggery, cardamom powder and nutmeg, stirring until the mixture is dry and holds together when pressed. Allow to cool completely. Mix plain flour, wheat flour and salt together, then make a dough with water and 20ml ghee, kneading until soft and elastic. Divide dough into 4 equal portions and roll each into a ball. Flatten one portion, place a quarter of the dal mixture in the centre, fold edges over and seal, then gently roll out into a thin round. Heat a griddle, place the poli on it and cook until light brown spots appear, turning once, then brush generously with remaining ghee and press gently with a cloth. Serve hot, preferably folded into quarters.
