Marinate the beef steaks in crushed garlic, parsley, coriander, lemon juice, olive oil, salt and pepper for at least 4 hours, preferably overnight. Heat a large cast iron skillet or barbecue grill to high temperature until smoking hot. Place the marinated beef steaks on the grill and sear for 3-4 minutes on each side for medium-rare, allowing the outside to develop a dark crust whilst maintaining a juicy interior. Continue cooking to your desired doneness, turning only once. Whilst the meat cooks, grill the halved tomatoes and thick onion slices until charred and tender. Rest the cooked churrasco for 5 minutes on a warm plate, then serve with the grilled vegetables and a sprinkle of coarse sea salt.
