Heat oil in a heavy-bottomed pot and fry the onions until golden, then add garlic and ginger, cooking until fragrant. Add the cubed pork and brown on all sides for 8-10 minutes. Pour in the water and bring to a boil, then reduce heat and simmer for 20 minutes until the pork is partially tender. Add the potatoes and dried chillies, then continue simmering for another 15 minutes until both are cooked through. Stir in the coconut milk and heat gently without boiling, then remove from heat and fold in the grated cheese until completely melted and combined. Season with additional salt to taste and serve hot with steamed rice.
