Beat eggs with caster sugar until pale and light, then fold in the crumbled fresh mizithra cheese gently. Sift flour with baking powder, cinnamon and salt, then fold into the cheese mixture until just combined. Heat olive oil in a deep pan to 170C and carefully drop spoonfuls of mixture into the hot oil, frying until golden on both sides, approximately 3-4 minutes total. Drain the fried cakes on kitchen paper. Warm honey and drizzle generously over the warm mizithracakes, allowing it to coat them well. Serve immediately whilst still warm, preferably dusted with additional cinnamon and accompanied by strong Greek coffee.
