Rinse the kidney beans and black-eyed peas, then soak them for at least 4 hours or overnight. Drain and add to a large pot with fresh water, the millet leaves or bay leaves, halved onion, garlic, ginger, turmeric and salt. Bring to a boil, then simmer for 45 minutes until the legumes are tender but not falling apart. Rinse the rice and add it to the pot along with the palm oil, stirring well to combine. Continue cooking for another 20-25 minutes until the rice is fully cooked and the mixture has a porridge-like consistency. Serve hot in bowls, traditionally accompanied by fried plantains, gari and gravy, hard-boiled eggs, and spicy pepper sauce.
