Method

Preheat oven to 180°C. Melt butter gently and mix ground almonds, icing sugar, 2 tablespoons of orange flower water, cinnamon and salt in a bowl to form a paste. Layer three filo sheets, brushing each with melted butter, then spread half the almond mixture over the top. Layer three more filo sheets with butter between each, then spread remaining almond mixture. Cut into 12 diamond or square shapes and place a blanched almond on each piece. Bake for 20-25 minutes until golden and crisp. Meanwhile, warm honey with remaining orange flower water. Immediately upon removing from oven, drizzle the warm honey syrup over the hot pastries, allowing it to soak in. Cool to room temperature before serving.
