Crush the cardamom pods and extract the seeds, grinding them finely. Whisk together the flour, baking powder, salt, sugar and ground cardamom. In a separate bowl, beat the eggs and mix with milk and melted butter. Combine wet and dry ingredients until a smooth batter forms. Peel and core the apples, cutting them into small cubes. Heat the æbleskiver pan with oil, pouring batter halfway into each spherical mould, adding a few apple pieces and a small spoonful of jam to each one. Turn the balls carefully with a skewer or special fork every few minutes until golden brown on all sides, approximately 10-12 minutes total. Serve warm, dusted generously with icing sugar.
