Slice the day-old bread diagonally into pieces approximately 2cm thick, discarding the hard ends. Whisk together the eggs, milk, caster sugar, vanilla extract, cinnamon and nutmeg in a shallow bowl until well combined. Heat the butter in a large frying pan over medium-high heat until foaming. Dip each bread slice into the egg mixture, coating both sides thoroughly but not allowing it to become soggy, then place immediately into the hot butter. Fry for 2-3 minutes on each side until golden brown and crisp. Transfer to a warm plate and dust generously with icing sugar. Serve immediately with warm maple or cane syrup drizzled over the top.
