Combine the golden syrup, butter, and caster sugar in a heavy-bottomed saucepan over medium heat, stirring occasionally until the butter melts and ingredients are well combined. Continue heating without stirring until the mixture reaches hard crack stage at 150°C, approximately 15-20 minutes. Remove from heat and quickly stir in the bicarbonate of soda and vinegar, which will cause the mixture to foam and lighten in colour considerably. Pour the foaming mixture onto a greased baking tray and allow to cool completely for 2-3 hours until hardened. Once set, break into irregular pieces with your hands or a hammer and store in an airtight container, traditionally enjoyed as a sweet confection at fairs and markets throughout Ulster.
