Cut the aged Montasio cheese into slices approximately 1cm thick and chill for at least 30 minutes. Set up three shallow bowls with flour in the first, beaten egg in the second, and breadcrumbs mixed with salt and pepper in the third. Coat each cheese slice lightly in flour, shaking off excess, then dip in beaten egg, and finally coat thoroughly in breadcrumbs, pressing gently so they adhere. Heat the vegetable oil to 170°C in a deep frying pan or suitable vessel. Working in batches of 3-4 slices, carefully lower the breaded cheese into the hot oil and fry for approximately 90 seconds until golden brown, turning once halfway through. Remove with a slotted spoon and drain on absorbent kitchen paper. Serve immediately whilst the exterior is still crispy and the interior is softened and creamy.
