Combine flour, baking powder and salt in a large bowl. In another bowl, whisk eggs and sugar together until pale and fluffy, then add vanilla extract. Fold the dry ingredients into the egg mixture until a thick batter forms. Heat oil in a deep pan to 170 degrees Celsius. Using two spoons or a small ice cream scoop, carefully drop rounded portions of batter into the hot oil and fry until golden brown on all sides, approximately 3-4 minutes, turning occasionally with chopsticks or a skewer. Remove with a slotted spoon and drain on kitchen paper. Serve warm or at room temperature.
