Melt butter in a large heavy-bottomed pan over medium heat and briefly fry the diced onion until softened, about 2 minutes. Break the vermicelli noodles into short pieces and toast them in the butter for 3-4 minutes, stirring frequently until they turn golden brown and release a nutty aroma. Add the rinsed rice and stir well to coat with the butter, toasting for 2-3 minutes. Pour in the hot stock, add salt, pepper and cinnamon, then bring to a boil. Reduce heat to low, cover with a tight-fitting lid and simmer undisturbed for 18-20 minutes until the liquid is absorbed and the rice is tender. Remove from heat and let rest, covered, for 5 minutes before fluffing with a fork and serving.
