Fry the Belgian fries in hot oil until golden and crispy, then season generously with salt. Cook the beef patties in a hot pan for 3-4 minutes each side until browned, placing a slice of cheese on top in the final minute to melt. Split the baguette lengthways and butter the inside lightly, then toast the cut sides briefly in the pan. Spread mayonnaise on the bottom half and mustard on the top half, then layer both beef patties with melted cheese onto the bottom half. Top with pickled gherkins and close the sandwich firmly. Wrap the sandwich in paper and serve immediately alongside the hot fries.
