Combine minced pork, cabbage, water chestnuts, soy sauce, sesame oil, ginger, garlic and spring onions in a bowl and mix until well combined. Place one wonton wrapper in the palm of your hand, add one teaspoon of filling to the centre, then gather the wrapper up around the filling and gently squeeze to form a pouch, leaving the top open with crimped edges. Place each dim sim on a damp cloth. Heat oil in a large frying pan over medium-high heat and shallow fry the dim sims, flat side down, for 2-3 minutes until golden. Mix water and cornflour together, then pour into the pan with the dim sims, cover with a lid and steam for 5-7 minutes until cooked through. Serve hot with soy sauce and chilli sauce for dipping.
