Preheat the oven to 160°C and line two baking trays with baking paper. Combine the oats, flour, coconut and sugar in a large bowl. Melt the butter with the golden syrup in a small saucepan over gentle heat. Mix the bicarbonate of soda with the boiling water until it stops fizzing, then add to the melted butter and syrup. Stir the wet ingredients into the dry mixture until well combined. Drop heaped teaspoonfuls onto the prepared trays, spacing them well apart, and flatten slightly. Bake for 12-15 minutes until golden brown, then cool on the trays for 5 minutes before transferring to a wire rack.
