Press the curd cheese through a fine sieve or blend briefly until smooth, then combine with beaten eggs, flour, sugar and salt to form a thick batter. Shape the mixture into 12 oval patties about 2cm thick, dusting with a little extra flour if sticky. Heat the oil in a large frying pan over medium-high heat and fry the syrniki for 3-4 minutes per side until golden brown and crisp. Serve warm with a generous dollop of soured cream and jam or stewed fruit on the side.
