Combine the Worcestershire sauce, soy sauce, and water in a heavy-bottomed saucepan over medium-low heat. Add the diced onions and minced garlic, stirring occasionally, and simmer gently for 5-7 minutes until the onions are translucent. Stir in the tomato puree, lime juice, cumin, coriander, black pepper, and salt, combining thoroughly. Reduce the heat to low and allow the mixture to simmer gently for 15-20 minutes, stirring occasionally, until it reaches a slightly thickened consistency. Taste and adjust seasoning as needed. Allow to cool completely before transferring to sterilised bottles for storage.
