Soak the dried rice noodles in hot water for 5-7 minutes until softened, then drain well. Heat the oil in a large wok or frying pan over high heat, then fry the garlic and onion until fragrant, approximately 1 minute. Add the pork and prawns, stirring constantly until cooked through, about 4-5 minutes. Add the carrot and cabbage, tossing continuously for 2-3 minutes until beginning to soften. Stir in the drained noodles along with the soy sauce, oyster sauce, water, and black pepper, tossing everything together for 3-4 minutes until the noodles are heated through and the liquid is mostly absorbed. Finish with the spring onions and salt to taste, tossing once more before serving hot.
