Mix the pork, prawns, spring onions, 1 tbsp soy sauce, sesame oil, ginger, and garlic in a bowl until well combined. Place a teaspoon of filling in the centre of each wonton wrapper, wet the edges with water, then fold into a triangle and bring the two corners together. Bring a large pot of water to the boil and cook the wontons until they float to the surface, then simmer for a further 2-3 minutes. Heat the chicken stock in another pan with remaining soy sauce and white pepper. Add the wontons to the stock along with the bok choy and simmer for 2 minutes until the greens are tender. Serve immediately in warm bowls with the broth.
