Keep all equipment and ingredients thoroughly chilled. Combine the minced pork, diced fat, salt, pepper, ginger, nutmeg, and caraway seeds in a bowl, then gradually mix in the ice-cold water until the mixture is light and holds together. Stuff the mixture into prepared hog casings, prick any air pockets with a needle, and tie off into individual links. Heat oil in a large frying pan over medium heat and cook the bratwurst for 12-15 minutes, turning occasionally until golden brown and an internal temperature of 71°C is reached. Serve immediately with mustard, sauerkraut, and crusty bread.
