Place two scoops of vanilla ice cream into each serving glass or small bowl. Brew a strong espresso coffee and allow it to cool for about 30 seconds so it's hot but not boiling. Slowly pour the hot espresso over the ice cream, allowing it to partially melt and create a delicious sauce. Serve immediately with a spoon and small fork, and enjoy whilst the ice cream is still cold but becoming creamy.
