Method

Heat the vegetable oil in a deep frying pan to 180°C. Fry each corn tortilla for approximately 1-2 minutes until golden and crisp, turning once, then drain on kitchen paper and sprinkle with salt whilst warm. Spread a thin layer of warm refried beans onto each fried tortilla, then top with shredded chicken. Layer the lettuce, diced tomatoes, and grated cheese on top of each tostada. Finish with a dollop of soured cream and a sprinkle of fresh coriander. Serve immediately whilst the base is still crisp and warm.
