Method

Mix flour, salt and yeast in a large bowl. Add water and olive oil, then knead for 10 minutes until smooth and elastic. Cover and leave to rise for 1-2 hours until doubled. Divide dough into 24 equal pieces and roll each into a thin stick about 20cm long, stretching gently with your hands. Place on oiled baking trays, spray lightly with water, sprinkle with coarse sea salt, and leave for 20 minutes to prove. Bake at 200°C for 15-18 minutes until golden and crisp throughout. Cool on wire racks.
