Preheat the oven to 190°C and line baking trays with baking parchment. Cream together the softened butter and both sugars until light and fluffy, approximately 3-4 minutes. Beat in the eggs one at a time, then add the vanilla extract and mix until combined. In a separate bowl, sift together the flour, bicarbonate of soda and salt, then fold into the wet mixture until just combined. Stir in the chocolate chips evenly throughout the dough. Drop rounded tablespoons of mixture onto the prepared trays, spacing them about 5cm apart, and bake for 9-11 minutes until golden at the edges but still soft in the centre. Cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
